The domain is located in Aragon, Cabardès, north-west of the medieval city of Carcassonne, on the first slopes of the Massif Central mountains, where Southern and Atlantic winds cross paths. It is split between two different terroirs: clay and limestone on ancient ocean bottom, called « alvéoline clay », and for the El Pépé cuvée, hard clay from Ventenac. These two terroirs are at an altitude of 300 meters, in the middle old wild méditerranean nature. The vineyards are farmed organically, with a special attention to copper. Manual harvest is done in small crates and the grapes are fermented and aged in the most “natural” way.
