Emma and Philippe Bordes
Emma and Philippe created the domain in 2001 on 10 hectares of vineyards near St Chinian. Philippe traded his 20 year plumbing career in Montpellier and embraced the winemaker’s life and come back to his roots and the hills where he grew up. They farm organically, under the ECOCERT label. Their soils are an particular mix of sand and limestone. Sand being a very inhospitable environment for phylloxera, one can still find very old vines in the area and some of his Carignan vines are a hundred years old. Once hand picked at perfect maturity, the grapes are fermented naturally in an old stone cave, without the addition of yeast and with minimum intervention. A very minimal addition of sulfite at bottling when necessary.
