Region: Cambridge, Vermont
Grape: 50% Muscat Valvin, 50% farmstead apples
Vineyard: grapes from Folts Family Vineyard in the Finger Lakes – silty loam soils, conventional farming. apples from the Chertok farm, 50 year old trees, clay soils, practicing organic.
Winemaking: Whole cluster, food tread grapes, 3-4 weeks of maceration with daily punchdowns. lots were split into two and refilled with apple millings, macerated for an additional 1-2 weeks. pressed into 400L qvevri.
Aging: 6 months in qvevri on gross lees.
