Lost up high in the Pyrenées mountains near Perpignan, a place called Fenouillèdes in the village of Caramany (Pyrénées-Orientales), the honey bee farm was created in 2007 with 200 hives. Since 2009, the farm has transitioned to organic and in 2011 they started producing grapes on 4 hectares in the town of Montner. The vineyards are certified AB (organic agriculture) and vinification is done naturally, fermenting with indigenous yeasts without any oenological chemicals added, save for minimal sulfur additions.
