Winemaking: Colombard — direct press, settled overnight, racked off gross lees into stainless steel. Chardonnay — direct press, settled overnight, racked off gross lees into concrete egg and neutral oak barriques. The wines were blended just before bottling.
Aging: Colombard — neutral oak barriques and concrete egg for 6 months. Chardonnay — neutral oak barriques for 7 months.
