Process: locally grown sugar can harvested without burning the fields. the sugar cane is crushed to extract the juice and fermented. the resulting wash is distilled in two old creole column stills to 70% abv.
Fermentation: 72 hours with bakers yeast.
Aging: on Marie-Galante in ex-bourbon casks,
ABV: 57.5%
