Winemaking: After the manual harvest, the sorting takes place on the property and then in the cellar. The grapes are chilled overnight and then placed in a vat by gravity. It macerates for 5 days and then gravity destroys it. The juices are pressed and flowed in old barrels that are more than 10 years old
