Process: locally sourced sugar cane is pressed on site and fermented. dual-distilled: once through an alembic still and once through a Savalle column still.
Fermentation: 36-48 hours in large open vats with bakers yeast.
Aging: 3 years small oak barrels, 7.5 years in large oak foudre.
