Winemaking:  Whole cluster pressed. Hard pressed fractions set to the side to avoid potential smoke flavors. Juice settled overnight and racked into large neutral French Barrique where it fermented for six weeks. This wine aged on lees for 5months prior to release, and was left undisgorged.
